I'm not much of a Marvel-reader, but is that creature crawling on the wall Fin Fang Foom? And I take the Hulk will be the gray Hulk?

No, that's likely to be one of the Ultimate Skrulls.
Some of these scenes looks almost as if they had been taken straight out of the book.
ApparentlySteven Gordon, one of the guys that's co-directing and adapting Hitchs designs is the same guy that did the character-designs and directed X-men Evolution. Another plus for this movie.
Apparently there's been a statement that Hitchs acctually done some extra designs for this piece, that they can't say what, but apparently he did some exceptional character work.
Looks as if the reports of Cap being in his original instead of Ultimate costume was wrong also.

It looks like they are using the colours of the original hulk (which was techinically grey), and not the "grey hulk". The grey hulk was introduced later on and was intelligent. The hulk they are showing looks pretty out of control.
The grey hulk and original hulk were two pretty distinct characters.

Like original Hulk, Ultimate Hulk starts grey, and has always been seen as grey in the comics so far (I think).
And oh yeah is he out of control. And ANGRY. Especially at Blue Man, Naked Guy, Freddie Prinze Junior and all those aliens that called him a sissy.
Ultimate Hulk vs Wolverine shows him as green. I think I know why the change, but it'd be a spoiler if I'm right so I'll hush.
The Ultimates are being rebranded Ultimate Avengers after Millar and Hitch leave, I believe, so this name is one of the first effects of that...
